Located in Limoux, the Maison Guinot is a historic producer of exceptional blanquettes and crémants. Family business for 6 generations, it perpetuates with passion and know-how the tradition of sparkling wines, elaborated according to the ancestral method and the traditional method. A unique heritage at the service of quality and authenticity.
Spread over 28 hectares around Limoux, our three estates – Saint Jean, Taïch and Salle de Saint Polycarpe – benefit from an exceptional terroir in Premier Cru. Thanks to these vineyards, we produce Blanquette and Crémant de Limoux AOC, as well as still wines in Chardonnay, Pinot Noir and Merlot.
Maison Guinot elaborates its cuvées with care by associating various vintages, grape varieties and terroirs in order to create harmonious blends that respect the requirements of the Appellation d’Origine Contrôlée. Each cuvée is designed to reveal a unique identity, with a subtle balance achieved through regular tastings and careful monitoring throughout the winemaking process.
The Traditional Method, inherited from an ancestral know-how, gives our sparkling wines all their finesse and elegance. The second fermentation in the bottle allows the creation of a fine and aromatic bubble, while a prolonged ageing on lees, in the darkness and freshness of our cellars, refines their aromas and enriches their complexity. Depending on the cuvées, this aging can extend from 2 to 5 years, thus bringing great richness and a beautiful gustatory expression to each wine.
The work of the vine follows a natural cycle punctuated by the seasons, each step being crucial for the production of a quality wine, from winter pruning to the autumn harvest.
